Instructions

Preparation

  • Preheat the oven to 200°C (390°F).
  • In a medium bowl, toss the red seedless grapes with olive oil and a pinch of salt until well-coated. Spread them evenly on a baking sheet.

Roasting

  • Place the grapes in the preheated oven and roast for 15 to 18 minutes until blistered and juicy.

Whipping the Feta

  • In a blender or food processor, add feta cheese, Greek yogurt, lemon juice, olive oil, and cracked black pepper. Blend until smooth and fluffy. Add more olive oil or yogurt if too thick. Chill in the refrigerator if desired.

Toasting the Walnuts

  • In a dry skillet over medium heat, toast the walnut halves for 5-7 minutes until fragrant and slightly browned. Keep an eye on them to prevent burning.

Assembly

  • Spoon the whipped feta into a serving bowl. Top with roasted grapes and their juices, scatter toasted walnuts, and drizzle with hot honey.
  • Garnish with fresh thyme leaves or chili threads if using.

Serving

  • Serve with warm pita, baguette slices, or seeded crackers.

Notes

Choose ripe grapes for maximum sweetness. Always taste the whipped feta before serving and adjust seasonings. Don't rush the roasting process, as grapes need time to develop their flavor. Toast the walnuts just until fragrant.
