Instructions

Roast the Strawberries

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, toss your hulled and halved strawberries with balsamic vinegar, honey, and a sprinkle of black pepper.
  • Roast them in the oven for 15-20 minutes until they soften and caramelize.
  • Remove from oven and allow to cool slightly.

Make the Whipped Feta

  • In a food processor, combine crumbled feta, softened cream cheese, olive oil, lemon juice, and black pepper.
  • Blend until smooth, pausing to scrape down the sides. Add extra olive oil for a looser texture if desired.

Assemble & Serve

  • Spread the whipped feta mixture onto a serving plate or bowl, swirling for visual appeal.
  • Top with warm roasted strawberries, allowing some juice to pool around the feta.
  • Drizzle with olive oil and sprinkle with chopped basil or mint. Garnish with black sesame seeds if desired.

Notes

Consider infusing olive oil with herbs for enhanced flavor. Leftover whipped feta makes a great spread for toasted bread.
