Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with butter or non-stick spray.
  • Prepare the crust: In a mixing bowl, combine the Oreo crumbs and melted butter until well mixed. Press it evenly into the bottom of the springform pan. Bake for 10 minutes until set, then allow to cool.

Making the Cheesecake

  • In a large mixing bowl, beat the softened cream cheese until creamy and smooth. Add sugar and mix until fluffy. Incorporate sour cream and vanilla extract.
  • Beat in the eggs one at a time, then mix in yellow food coloring and crushed Oreos.

Baking and Cooling

  • Pour the batter into the cooled crust and bake for 60-70 minutes until the center is set but slightly jiggly. Leave in the oven (turned off) for 1 hour.
  • Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.

Ganache and Decoration

  • Melt white chocolate chips and heavy cream together in the microwave until smooth for drizzle.
