Instructions

Preparation

  • In a medium bowl, mix the crushed biscuits with the melted butter until they are fully coated. Press this mixture into the bottom of a springform tin, creating an even layer. Place it in the fridge and let it chill for about 30 minutes to firm up.
  • In a large mixing bowl, whisk together the cream cheese, powdered sugar, lemon juice, lime juice, lime zest, and vanilla extract until the mixture is smooth and creamy.
  • In a separate bowl, whip the double cream to soft peaks. Carefully fold this whipped cream into the citrus cream cheese mixture, incorporating it gently to maintain that desired airy texture.

Assembly

  • Pour the creamy filling over the chilled biscuit base, smoothing the top with a spatula. Chill the cheesecake in the fridge for at least 4 hours, or ideally overnight, to allow it to set perfectly.

Serving

  • Once ready to serve, remove the cheesecake from the springform tin. Pipe whipped cream around the edges, sprinkle with crushed biscuits and zest, and finish with lime slices for a visually stunning dessert.

Notes
