  • to taste ranch dressing For serving, balances the crunch.

Instructions

Preparation

  • Preheat your oven to 425°F (218°C).
  • Line a baking sheet with parchment paper.
  • Slice the zucchinis into 3-inch long, 1/2-inch thick strips.
  • Beat the eggs with a pinch of salt and a few dashes of ground black pepper in a bowl.
  • On a large plate, mix together the panko bread crumbs and Parmesan cheese.
  • Dip each zucchini strip into the egg mix, letting any excess drip off.
  • Press each zucchini piece into the panko-Parmesan mixture to ensure it is well-coated.
  • Arrange the coated strips on the prepared baking sheet in a single layer.

Cooking

  • Bake in the oven for 20–25 minutes or until golden and crispy.
  • Serve hot with ranch dressing on the side for dipping.

Notes

Try seasoning your panko with garlic powder or Italian herbs for extra flavor. For a healthier option, bake them without the breadcrumb coating for a simple roasted zucchini.
