Ingredients

For the Zucchini Rounds

  • 2 medium medium zucchinis, sliced into 1⁄4-inch rounds Choose firm zucchinis, free of blemishes.
  • 6 ounces soft, spreadable goat cheese For a creamier texture.
  • 2 tablespoons olive oil For grilling the zucchini.
  • 1/4 teaspoon sea salt To enhance natural zucchini flavors.
  • 1/4 teaspoon black pepper To taste.

For the Almond Thyme Honey Drizzle

  • 1/4 cup honey Warm before mixing.
  • 2 tablespoons sliced almonds, toasted To add crunch.
  • 1 teaspoon fresh thyme leaves For flavor.
  • 1/4 teaspoon crushed red pepper flakes Optional for a hint of heat.

Instructions

Preparation

  • Preheat your grill pan or skillet over medium heat.
  • Brush both sides of the zucchini rounds with olive oil and season with sea salt and black pepper.

Grilling

  • Grill the zucchini slices for about 2 minutes per side, or until they are tender and slightly charred.

Honey Drizzle

  • In a small saucepan over low heat, warm the honey and stir in toasted almonds, fresh thyme, and optional crushed red pepper flakes.
  • Allow this mixture to simmer for about a minute, then remove from heat.

Assembly

  • Spread goat cheese on half of the grilled zucchini rounds and stack another slice on top. Repeat for 2 or 3 layers.
  • Drizzle the warm almond thyme honey over the top.

Serving

  • Garnish with additional thyme leaves and toasted almonds. Serve warm or at room temperature.

Notes

For best results, select firm zucchinis and space them when grilling to avoid steaming. Consider adding lemon zest or using different nuts like walnuts or pecans. Omit crushed red pepper flakes for a milder flavor.
